Matina Gjurašić Participated in a Panel Discussion on Profitability in the Hospitality Industry

How to Stay Profitable in the Hospitality Industry?

Dr. Matina Gjurašić, Research Associate at the Institute for Tourism, participated in the panel discussion “How to Stay Profitable?” at the 38th Congress of Hospitality and Tourism Professionals, organised by the Croatian Chamber of Trades and Crafts in Poreč.

She emphasised that cost control is essential for profitable business operations. Guests are willing to pay a higher price when they receive corresponding value in return, which is created through the quality of ingredients, service, atmosphere and the overall experience.

She also highlighted the potential of gastronomy as a travel motivator and an opportunity to extend the tourist season, alongside good transport connections with other destinations and source markets, as well as continuous international promotion.

The panel discussion also featured:

• Marinko Blečić, Director of the METRO Wholesale Centre in Rijeka
• Đurđica Mostarčić, President of the Accounting Section of the Croatian Chamber of Trades and Crafts
• Stanislav Briškoski, Member of the Hospitality and Tourism Professionals Section of the Croatian Chamber of Trades and Crafts
• Stiven Vunić, Chef and Owner of Zijavica Restaurant

The panel was moderated by Milan Pavlović.

We would like to thank the Croatian Chamber of Trades and Crafts for the invitation and all participants for the valuable exchange of experiences.
